There are many different aromas and flavours from one pepper to another, depending on where they grow, how mature the berries are when harvested and what processes they then undergo. The geographical origin is essential as it gives the pepper its typicality, the same is true for tea, coffee or cocoa.
Salt is becoming more diverse! The different geographical origins and herb flavourings provide a host of different salts today. The finest quality French salt is called Fleur de Sel and is from Guérande. It is particularly known for its delicate taste and high levels of trace elements. You can either select the pure type or the flavoured ones to better suit the particular dish you want to enhance. There are many other kinds of delicious salts: pink Himalayan salt is famous for its origins and colour but also its high mineral content and purity. Truffle salt adds a festive touch to your everyday potatoes or pasta.
