Zaatar means "thyme" in Arab. We call this spices mix the Lebanese mix because it is really consumed in Lebanon but also in Syria and all the east Mediterranean cost. It is one of the easiest mix to use because it can be employed as well as raw or cooked. Cooked, it can be mixed with olive oil before basting meats, vegetables, fishes... but it can be used only sprinkled at beginning or end of cooking. It goes really well with poultry and all sorts of vegetables as zucchini, eggplants, crude or cooked tomatoes. You can use is to prepare meatballs or sprinkle your fried eggs. Zahtar is excellent with barbecue and can replace Provencal Herbs! Cru, the Lebanese mix goes really well with cucumber or goat cheese. During aperitif, mix it with white cheese to dip your salad (carrots, cucumber) a real delight! Or simply, dipped bread with olive oil and sparkled of zahtar.
