The basque pepper is produced only on 10 communes. It is a single spice with a red brick colour, to powder of plate, without cooking, on grilled fishes, salads, pasta and goat cheese. With a good smell of tomatoe, and a taste which reminds in the same time sweet pepper and fresh hay. The Piment d'Espelette is more aromatic than spicy. It was brought with boats from the portugese and spanish conquistadors at XVI th Century by the famous Spice Route. It is used in a traditionnal way in basque recipes: piperades, marmitako with tuna, axoa, hake and chipiron.
