This plant, from the Allium sativum family, is one of the most popular herbs in French cuisine! Its use is widespread throughout the world, and Chinese writings dating back more than 5000 years already mention it. It's a great classic in the kitchen and essential in Provencal cuisine. It is generally used in combination with onion or shallot. Dried garlic is very convenient to flavour any type of sauce, more delicately than raw garlic. It is excellent in a mayonnaise or an aioli in association with saffron, in a sauce saté, a persillade or a vinaigrette. Finally, it is a perfect addition to baked potatoes or pan-fried mushrooms.
