Black lemon is a great classic of the Middle East cuisine and particularly in Iran where it is very widly used. Black lemon, also called loumi in Iran is a green lemon bleached then dried naturally in the sun on a carpet of banana leaves for several weeks. The drying process gives it its black color both outside and inside. It is a very versatile condiment that can be found in many dishes: sauces, soups, stews ... its use is multiple. Its taste is delicate, we recommend about a teaspoon per person in the preparation of your dishes.
